Carnitas by the pound

Cooked carnitas, sold by the pound, straight out of the cazo in Blackfoot, Idaho. Not frozen, not from a package — the same carnitas we’ve been slow-cooking since that morning, weighed out hot and wrapped for you to take home. We only do it Saturdays and Sundays, and only until it’s gone.

  • Carnitas — one pound

    Straight carnitas, crispy edges and all, weighed hot off the cazo.

  • Carnitas mixed with cueritos — one pound

    Carnitas mixed with cueritos — soft, tender pork skin. If you grew up on carnitas y cueritos, this is the one.

    $16/lb

Cash and card both fine. There’s no minimum and no maximum — but the bigger the order, the more it helps to call ahead, because we cook a set amount each morning and that’s all there is.

Ordering for a crowd

How much do you need?

The short answer: about half a pound a person if the carnitas are the main event, less if there’s rice, beans and everything else on the table. Our Carnitas Plate is half a pound and it feeds one person properly, so that’s the number we work from.

Buying for a party? Call the day before if you can. We cook in limited batches, and on a good Saturday the pound sales go early — if we know you’re coming for four pounds, we set it aside.

What are cueritos?

Cueritos are pork skin — simmered soft rather than fried crisp, so they come out silky and a little springy, nothing like a chicharrón. Mixed through a pound of carnitas they add a texture most people either grew up with and miss, or have never had and end up ordering again.

The mixed pound is $16 instead of $14. Ask for “carnitas con cueritos” at the window and Jenny will know exactly what you mean.

Three steps

How to buy a pound

  1. Come on a Saturday or Sunday

    By the pound is a weekend thing only. We’re out 9 to 5 both days — including Sunday, when most of Blackfoot is closed. Wednesday through Friday the truck is open 11 to 6, but that’s tacos and plates, not pounds.

  2. Call ahead for anything big

    One or two pounds, just walk up. Three or more, call — ideally the day before. We’ll weigh it out and have it waiting instead of you finding out we sold the last of it an hour ago.

  3. Come early

    We cook one batch a morning and stay till it’s gone. The pounds are the first thing to run out, because one customer can take four of them at once. Some Saturdays that’s early afternoon.
